Curry Roasted Delicata Squash with Red Onion

This is one of those seriously easy and seriously delicious recipes I make over and over again during the fall season when Delicata Squash is EVERYWHERE.  I have been buying a lot of our produce from a company called Imperfect Produce who actively works to save delicious produce from being wasted due to cosmetic issues or over supply. A week ago I ordered 14 Delicata Squash in my medium organic box (which is fully customizable!) and have been enjoying them greatly. Ingredients:

4-5 small/medium organic Delicata squash, sliced in half lengthwise, seeded, and cut into crescents

1/2 a large organic red onion, peeled, halved, and sliced into crescents

1 tablespoon organic curry powder, I used Teeny Tiny Spice Co Vadavan Spice Blend

3 tablespoons of organic olive oil or high quality avocado oil from Primal Kitchen

1 teaspoon sea salt

1/2 teaspoon freshly ground organic black pepper

Recipe:

Preheat oven to 375 degrees. Combine all of the prepped ingredients into a large bowl and toss to coat vegetables in the olive oil and spices. Lay a piece of parchment paper onto a half sheet pan and pour the vegetables onto the pan and spread out evenly so they will cook evenly and brown. Place into the preheated oven and bake for one hour occasionally gently flipping the vegetables as they cook. At the 50 minute mark, start keeping a close eye on the veggies as they cook because they will be getting pretty golden brown (and delicious) and you don't want them to burn! Serve with a nice salad and some clean protein to make a complete meal!

Health tip: stay away from all processed seed and vegetable oils like canola, safflower, cotton seed, corn, soybean, and all hydrogenated oils because they are incredibly toxic, often old and rancid, unstable, and loaded with inflammatory fatty acids. Stick with organic cold pressed olive oil, avocado oil, grass fed butter, grass fed ghee, and coconut oil for your culinary needs. High quality unprocessed fats are healthy for the body and need not be feared!
